Eric Bescak, a local food entrepreneur, has been experimenting with ideas for an edible bug food cart business in Madison.

Among the dishes he tested out on a group of friends recently were waxworm tacos (a big hit), chocolate-covered crickets on peanut butter-stuffed celery (like "ants on a log"), tempura superworms and chocolate chip cricket flour cookies. 

Bescak hopes to host more edible bug dinners, potentially collaborating with local chefs to create dishes for his cart.
