Bierock

The classic bierock has a slightly sweet dough stuffed with beef, sauerkraut, cabbage, onion and seasoning. The new Bierock bar and restaurant on Madison's north side serves the classic plus three other varieties.

 

A new bar and restaurant, Bierock, opened on the north side of Madison on July 3, hoping to offer its customers something other restaurants don’t.

“Bierocks are a comfort food,” said owner Amanda Carriveau. “They’re the type of food Grandma used to make, and in our case, that’s a literal statement.”

For owners Brian and Amanda Carriveau, the bierock comes from a family recipe. A bierock is a type of meat pie customers may find similar to a pasty. Bierocks are a slightly sweet bread dough traditionally stuffed with beef, onion, sauerkraut, cabbage and seasoning. The recipe was brought to the United States by Volga-German immigrants and is popular in the plain states like Nebraska and Kansas.

The environment that the owners hope to portray is a “vintage feel” that is a “throwback to yesteryear,” according to Brian Carriveau.

While the primary draw on the menu is bierocks, there are other items to choose from. Customers can choose a “bite” which consist of bacon dates and deviled eggs. There are also “savory sides” such as potato salad, coleslaw and mushroom stroganoff.

The restaurant also has 24 craft beers on tap, roughly divided equally between Madison-brewed beers, Wisconsin beers and one regional/national/international beers. Guests can also choose from options of cocktails and wines.

“Beer and bierocks are the perfect pairing,” said Amanda Carriveau. “We hope to be the type of place that’s comfortable to all customers, somewhere that encourages discussion and camaraderie over food and beer.”

According to Brian Carriveau, the restaurant is primarily going to serve the 25- to 45-year-old demographic. But they are also excited to serve college students and older diners.

Brian and Amanda complement each other well, because “I (Brian) has a passion for drink, and Amanda has a passion for food.”

Brian runs the front of the house, while Amanda runs the back of the house.

However, food and drinks isn’t the only thing customers can enjoy. The restaurant is hoping to have regular events that bring in customers.

According to Brian Carriveau, Bierock is having a Grateful Dead listening party, a World Cup final watch party and hoping to establish a trivia night every Wednesday.

Bierock hopes to be around for a long time, and become a household name in Wisconsin.

“We want to become a Madison institution that people know and love. We want people to remember us because how unique the bierock is,” Brian Carriveau said.

Bierock is located at 2911 North Sherman Ave., in the Northside TownCenter. It's open from 3 p.m. to 10 p.m. Tuesdays and Wednesdays; 3 p.m. until midnight Thursdays; 3 p.m. until close on Fridays; 10 a.m. until close on Saturdays; and 10 a.m. until 10 p.m. on Sundays. It's closed Mondays.
